Been away for almost a year, got on and see there is now Jedi profession trees any more, just the force progression one. Did something change?

If your character is a jedi and this is your first time logging in since publish 8 was released you should have received a pop up message. Basically, what that message says is that you need to get yourself to the edge of the village to begin the respec process. You will need to invest 24 skill points in force sensitive skills before seeing your jedi trainer to rebuild your template. This must be competed within 48 hrs from first login.
